Normal Donuts
Ingredients :
1/2 cup milk
1 teaspoon salt
2 packages yeast
3 eggs, separated
1/3 cup granulated sugar
1/3 cup butter
1/2 cup warm water
3 3/4 cup flour
Vegetable oil for frying
Sugar
Jelly
Method :
1. Scald milk; add sugar, salt and butter. Add yeast to warm water. Stir in milk mixture, egg yolks and 2 cups flour. Add remaining flour. For jelly filled, roll dough about 1/4-inch thick. For regular doughnuts, roll about 3/8 to 1/2-inch thick and cut.
2. Jelly Doughnuts: Place 1 teaspoon jelly on circle and brush top circle with egg whites on one side and seal. Fry at 375 degrees F until done.

Glazed Doughnuts
Ingredients :
2 packages active dry yeast
1/2 cup warm water
1/2 cup scalded milk
1/3 cup shortening
1/3 cup granulated sugar
1 teaspoon salt
3 1/2 to 4 cups all-purpose flour
2 eggs
Glaze:
2 cups sifted confectioners’ sugar
3 tablespoons water
1/2 teaspoon vanilla extract
Method :
1. Soften yeast in 110 degree F warm water.
2. Combine milk, shortening, sugar and salt, then cool to lukewarm. Add one cup of flour and beat well. Beat in softened yeast and eggs. Add enough of remaining flour to make a moderately soft dough. Mix well.
3. Place in a greased bowl and turn to grease the surface. Cover and chill for 3 hours or overnight.
4. Turn onto slightly floured surface and roll to 1/3-inch thick.
5. Cut with floured doughnut cutter. Let rise for 30-40 minutes until very light. While dough is rising, combine all ingredients of the glaze in a bowl and set aside.
6. Fry in 375 degrees F deep hot fat for 2 minutes or until brown, turning once. Drain on paper towels and dip them into the glazing bowl while warm.

Banana Doughnuts
Ingredients :
1 cup granulated sugar
1/4 cup shortening
2 eggs
1 cup mashed bananas
1 1/2 teaspoons vanilla extract
1/2 cup buttermilk
4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon nutmeg
Method :
1. Cream shortening and sugar together. Add eggs and beat well. Combine bananas, vanilla extract and buttermilk. Add to creamed mixture alternating with sifted dry ingredients. Roll on lightly floured surface. Cut with floured cutter and let stand 15 minutes. Fry in deep shortening.
